The olive tree:
Olea europaea is an evergreen tree that can grow to above 1000 years. It reaches a height of 10-12 m. Typical are the gnarled, furrowed trunk and the lush silvery shining leaf. The fruit is a stone fruit with a thin fruit skin and very oil rich fruit pulp. The hard stone core usually only contains an oil-rich seed. The olive tree grows very slowly. The first fruits he uses at an age of about 10 years. Two more decades are necessary until the harvests become fully productive.
How organic olive oil refined is produced:
Organic olive oil refined is extracted from the pulp of the fruit of the olive tree Olea europaea by mechanical cold pressing, separation from the water phase and filtration. The oil is then refined. The colourless to greenish-yellow oil has a neutral taste.
The refining process consists of the steps degumming, neutralization (only if the acid number is >4), bleaching (if the colour values require it), deodorization (about 1.5h at 210°C.). The final stage of the refining process is thus the deodorizing, which is why the declaration of the olive oil refined as "deodorized" would also be permissible and true. That is why we can provide our olive oil with the attribute R = refined.
